Well, this one was a doozy. I ordered a boneless ham and received a dry-cured country ham. I do not normally prepare country hams on the boat due to the amount of time it takes to make these hams. However, I had it and needed to make it. A country ham is a salt-cured ham that lasts a long time outside the refriger-ator. But to prepare it, you first must soak the ham in water for two days. That posed a slight problem on the boat. I needed to keep this ham in cool water and refrigerated. You only have so much room in the refrigerators on the boat. When you take the packaging off these hams you may notice mold on the ham. This is normal. The mold is from the aging process and can be removed with water and a stiff brush. Now rinse the ham and soak it for a couple of days. (See directions to prepare the dry-cured ham below.) In addition, I have included recipes that call for leftover ham. |
