Using engineered enzymes for tailoring the production of fatty acids and oils in transgenic crops is a major emphasis of agricultural biotechnology, but requires significant knowledge of the structure-function relationships in the enzyme target for successful redesign. Fortunately, the three-dimensional architecture and detailed chemical reaction mechanism of condensing enzymes in plants are well studied. This detailed understanding of how condensing enzymes function provides a foundation for experiments aimed at altering their chemistry. This work sets a precedent for engineering not only the condensing enzymes but other proteins involved in fatty acid and oil synthesis in plants. |
